A curry-spiced potato omelette with chilli, cherry tomatoes and coriander, finished under the grill. Lovely with a green salad.
This version of the Spanish classic leans towards India, with curry powder, chilli and fresh coriander running through the potato and egg. It is a quick one-pan affair that slots into brunch, lunch or a light supper. With a green salad alongside, it is simple, filling and gently warming.

Preparation
- Heat the oil in a large frying pan. Fry the onion and half the chilli for 5 minutes, until softened. Tip in the spices, fry for 1 minute more, then add the cherry tomatoes, potatoes and coriander stalks. Season the eggs well, pour them over the vegetables and leave to cook gently for 8 to 10 minutes, until almost set.
- Heat the grill and slide the tortilla underneath for 1 to 2 minutes, until the top is set. Scatter over the coriander leaves and the rest of the chilli, cut into wedges and serve with a green salad.
Tips from the ZestyPlate Kitchen
- Soften the onion and let the spices cook for a minute first; it sets up the depth of flavour.
- Season the eggs properly before they go over the vegetables.
- Finishing under the grill sets the top without drying out the base.
- Let it rest for a moment before you cut it into wedges.
