Flaky puff pastry wrapped around herby pork sausage meat, a British party staple.
Flaky, golden and dangerously moreish, homemade sausage rolls leave the shop-bought ones in the dust. Seasoned pork sausage meat goes into buttery puff pastry and bakes until crisp. They are just as good warm or cold, so they earn their place at picnics, parties and in lunchboxes alike.

- 1 sheet (320g), ready-rolled Puff Pastry
- 400g Pork sausage meat
- 1 small, finely grated Onion
- 1 tbsp, chopped Fresh sage
- 1 tsp Dijon Mustard
- 2 tbsp Breadcrumbs
- to taste Salt and pepper
- 1, beaten, to glaze Egg
- to sprinkle (optional) Sesame seeds

- Heat the oven to 200C/180C fan and line a baking tray. In a bowl, mix the sausage meat with the grated onion, sage, mustard, breadcrumbs and plenty of seasoning.
- Unroll the pastry and cut it in half lengthways to make two long strips. Spoon the sausage mixture in a line down the centre of each strip.
- Brush one long edge with beaten egg, then fold the pastry over the filling and press the edges together to seal. Trim them, then cut each long roll into 6 pieces.
- Sit them seam-side down on the tray, brush all over with beaten egg and scatter with sesame seeds. Snip a small slit in the top of each one.
- Bake for 22 to 25 minutes until deep golden and the pastry is crisp. Let them cool a little before serving.
Tips from the ZestyPlate Kitchen
- Grate the onion finely so it disappears into the filling rather than leaving lumps.
- Chill the assembled rolls for 15 minutes before baking and the pastry comes out even flakier.
- Seal the seam firmly and bake the rolls seam-side down so they stay shut.
