Sausages and buttery mash under a rich caramelised onion gravy, a true British pub classic.
Not much says British comfort food quite like bangers and mash. Plump sausages, soft buttery mash and a glossy onion gravy add up to far more than the simple parts suggest. It is quick, kind on the wallet and the sort of plate you go back to again and again.

- 8 Pork sausages
- 900g, peeled and chopped Potatoes
- 60g Butter
- 100ml Milk
- 2 large, thinly sliced Onions
- 1 tbsp Plain Flour
- 400ml Beef Stock
- 1 tbsp Worcestershire Sauce
- 1 tsp Wholegrain Mustard
- to taste Salt and pepper

- Heat a little oil in a frying pan and cook the sausages over medium heat for 15 to 18 minutes, turning them, until browned and cooked through. Set aside.
- In the same pan, melt half the butter and add the onions with a pinch of salt. Cook them slowly for 12 to 15 minutes until soft and golden.
- Stir the flour into the onions and cook for 1 minute, then gradually pour in the stock, Worcestershire sauce and mustard. Simmer for 5 minutes until it thickens into a glossy gravy.
- Meanwhile, boil the potatoes in salted water for 15 minutes until tender. Drain, then mash with the rest of the butter and the milk. Season well.
- Pile the mash onto plates, sit the sausages on top and pour over plenty of onion gravy.

- Cook the onions low and slow. The darker you take them, the deeper the gravy tastes.
- Heat the milk before it meets the potatoes and you will get smoother mash.
- Choose sausages with a high meat content. They have the best flavour and hold together better.
