Preparation

  1. Cut the cheese into long strips and chill in the fridge so it stays firm.
  2. Mix the flour, butter and egg in a bowl, season with the sugar, salt and olive oil, then gradually add the milk and knead well to a smooth, workable dough.
  3. Roll out the dough and cut into long strips 2–3cm wide. Roll each strip around a cheese strip in a spiral, making sure the dough fully covers the cheese so it doesn't melt out while frying.
  4. Roll the cheese sticks through flour to stop them sticking, then heat oil in a frying pan until hot and fry until golden.

Tips from the ZestyPlate Kitchen

  • Chill the cheese well so it stays firm and doesn't melt out before the dough crisps.
  • Wrap the dough fully around the cheese with no gaps, sealing the ends.
  • Dust in flour so they don't stick, and keep them cold until they hit the oil.
  • Fry in hot oil so the dough crisps quickly before the cheese escapes.

Frequently Asked Questions

Either the dough had gaps or the oil wasn't hot enough. Seal them fully and fry in properly hot oil.
Yes — brush with oil and bake or air-fry until golden, though frying gives the crispest shell.
A marinara or tomato sauce is the classic, but sweet chilli or garlic mayo are great too.
