This turkey banh mi takes the Vietnamese sandwich and gives leftover turkey a proper job: a crisp baguette loaded with pate, sliced turkey, quick-pickled veg and a handful of herbs. The pickle is what makes it sing, cutting through the richer fillings. Crunchy, creamy, savoury and sharp all at once, it is far more than the sum of its parts.

- 50g Chicken Liver
- 1/4 Cucumber
- 140g Turkey
- 1 tablespoon Mayonnaise
- 1 sliced Red Chilli
- Handful Mint
- 2 small Carrots
- 75g Red Cabbage
- 1/4 tsp Ground Ginger
- ½ tablespoon Rice Vinegar
- 1/2 teaspoon Golden Caster Sugar

Preparation
- For the pickled slaw, tip the carrots and cabbage into a large bowl. In a small bowl, mix the ginger, rice vinegar, sugar and a few pinches of salt, pour it over the vegetables and toss. Leave to sit for at least 15 minutes.
- Split the baguettes lengthways and spread the pate over the bottom half. Pile on the pickled slaw, cucumber and turkey. Stir the mayonnaise with the chopped chilli and spoon it over. Scatter with mint leaves and sliced chilli, close the sandwich and serve.
